i wanna know if it would be possible to create categories on sub-domains.

No, but it would be possible to have multiple installs: one for each subdomian for example. Then, each directory could only have categories for that sub domain.

that could get to be alot to manage very quickly, with say 20-40 main categories

I'm pretty sure subdomains have to actually be published to nameservers, so it would involve some coding that actually talked to the shell on your server, so you would need root access, and of course some expert programming.
