Renaming of categories and sub-categories

All the directories I've visited use the naming convention of 'categories' and 'sub-categories' but is it possible to name them something else?

Example: my project will be geographical so for categories I want to call it 'countries', and subcategories will be named 'regions' etc.

You'll just have to edit the template and replace "categories" with "countries", or "subcategories" with "regions"...then create database categories sorry countries according to your needs.
