question on displaying headlines (or titles)

I setup some tables in the main.tpl file.

I would like to display (n) number of headlines in the tables based on
most recent, most popular, or certain categories.

Can you tell me what code I can enter into the table to call just the
headlines of a specific category?

Does anyone know how to do this?
