What are the standard maintenance functions that should be performed on a daily, monthly, etc basis? When backing up should I suspend submissions or is it OK to backup without suspending? How do I suspend submissions? I don't see an option for that in the admin area.

In my opinion, the best way to backup is through your host. For example, I use a cpanel host, and I just grab a full site backup about once per week.
