Multi-Language issue

I've just started using the multi-language function. In setting things up, I noticed that all of the functionality seems to be working fine for most languages, but two of them (French and Simplified Chinese) come up with a blank screen.

This is true whether you access from the main page or through the admin console. My default language is English, but I can't see anyplace to define the other languages. The php files are in the Lang folder OK.

I'm baffled on this one and would appreciate any pointers.
