Meta Tags

Hi all,
ive added {$smarty.capture.title} to meta tags this way its working well at meta tags but at this variable there are - and > used so at my meta tags those keywords used to, for example i visite page Internet/Graphics
so meta looks like this

" - Internet
>
Graphics"

Can anyone tell me where those variables are defined and how to remove those - and > asci of (>).

Do you also know how to use extra text after the generated title, only on the mainpage?

but i want my meta in this format so actually i need variables of Main Category and Sub category instead of description {$description}.

i believe it's per category, but i could be wrong
